I love a good buffalo chicken dip, but the original recipe is LOADED with sodium. Just the hot sauce alone adds nearly 5,000mg. So for this year’s, “big game,” I recreated one of my favorite football tailgate dishes. Super flavorful and spicy without all the added salt.
Ingredients:
- 1 lb. chicken breasts (recipe included below or substitute 2 cups shredded rotisserie chicken)
- 8 ounces (1 package) cream cheese, softened
- 1/2 cup no salt hot sauce, such as Jersey Girl
- 1/2 cup ranch dressing (homemade is better)
- 1/2 cup blue cheese crumbles
- 1/2 cup sour cream
Directions:
- If making your own shredded chicken (otherwise jump to step 4), cut chicken breasts into three to four inch chunks. Season the chicken with your chosen spice blend and refrigerate for an hour or overnight.
- When ready to make dip, in an Instant Pot, place the chicken and stock. Pressure cook on High for 10 minutes, then naturally release for 10 minutes, carefully manually releasing any remaining pressure.
- Carefully remove the chicken and place onto a cutting board. When cooled a bit, shred the chicken with two forks.
- In a slow cooker (or you can use the Instant Pot on the slow cooker setting), place the chicken and all remaining ingredients and stir.
- Set on High, stirring every 20 to 30 minutes until melted and all the ingredients are combined, about 90 minutes.
- Place on Warm and serve with low sodium tortilla chips, celery, carrots, or your favorite dip vehicle of choice.
Optional Toppings:
- Low sodium bacon bits
- Sliced green onions
Serve with your favorite low sodium corn chip.
Alternative Cooking Methods:
- In a 350F degree preheated oven, place ingredients into a one quart baking dish. Bake for 20 minutes or until the dip is bubbling. Option to finish under the broiler to get a toasted cheesy top.
Salt Swaps:
- Making your own shredded chicken allows for the greatest control over the amount of salt, and spice, of the final dip.
- Using a low sodium hot sauce drastically reduces the amount of salt. Similarly, a low sodium homemade ranch dressing is best.
