Two Egg Bites

Egg Bites

Two Egg Bites

I was looking for some variety in my eggs. You can only eat so many omelets, scrambled or fried. While this recipe isn’t the fasted way to make breakfast, it’s a great meal prep for a busy family or commutes into the office. And because eggs are so versatile, you can add whatever you want to make them your favorite.

Ingredients:

  • 6 eggs
  • 1/2 cup whole milk, heavy cream, or sour cream
  • Fresh ground black pepper
  • 2-3 ounces shredded cheese (optional)
  • 1 cup small diced vegetables; such as jalapeno, bell pepper, tomato, spinach, scallions

Directions:

  1. Heat the oven to 300F degrees and prepare an oven safe dish with a quart of water. Prep your chosen veggies.
  2. In a medium bowl or large liquid measuring cup scramble the eggs with a whisk until you see air bubbles and well blended. Add in the milk/cream and whisk until well combined.
  3. Grease a muffin pan six to eight cups using oil or a nonstick cooking spray.
  4. Carefully pour or spoon the egg mixture into the greased cups about ⅓ of the way up the side. Add a few grinds of black pepper and a pinch or so of shredded cheese.
  5. Add the veggies to the egg mixture. Fill each cup to the top with the remaining egg mixture. Use a chopstick or spoon to ensure the ingredients are covered by the egg.
  6. Carefully place the pan of water on the bottom rack of the preheated oven and the muffin pan on the middle rack. Back for 30-40 minutes until the centers are firm and cooked through.
  7. Place muffin pan on a cooling rack for about 10 to 15 minutes. Use a silicon jar scraper, butter knife or chopstick to loosen from the sides once cooled.
  8. Eat when ready or transfer to an airtight container and store in the fridge for up to three days or in the freezer for up to three months.

Notes:

  • Fresh eggs are always best. You can separate the eggs if looking for an all egg white bite. Increase the amount of eggs used to eight.
  • Use any veggies you’d like, or even fresh herbs. All fresh veggies are low/no sodium so whatever you like is best.
  • Omit cheese or veggies depending on your taste. Ensure cooked through and adjust timing accordingly.
  • Leave the pan of water in the oven until cooled to avoid spilling or splashes of hot water.

Salt Swaps:

  • Fresh eggs contain the least amount of sodium and making homemade over store bought is the lowest sodium.
  • Cheese and natural egg sodium is what contains salt for these veggie cheese egg bites.
