Ingredients:
- 1/2 cup dried Adzuki Red Beans (or red kidney beans)
- 2 tablespoons Mirin
- 3 bay leaves
- 1 tablespoon low sodium soy sauce
- 2 garlic cloves
- 1/2 teaspoon black pepper
- 2-3 cups chicken or vegetable stock (enough to cover the beans with 1″ liquid above)
Directions:
- To a sauce pan, add the adzuki beans, bay leaves, mirin, garlic, and black pepper.
- Add the stock, making sure the beans are fully covered by the liquid with at least 1” above them.
- Cover and bring the broth up to a simmer.
- When simmering, turn the heat down to low. Allow to cook until the beans are tender, about 2 hours.
- Strain, if extra liquid, and enjoy!
Salt Swaps:
- Using dried beans versus canned reduces the amount of sodium.
- Low sodium soy sauce over its full salt version puts you in control.
