Chinese Style Red Beans

Chinese style red beans in a blue and white ramekin

Ingredients:

  • 1/2 cup dried Adzuki Red Beans (or red kidney beans)
  • 2 tablespoons Mirin
  • 3 bay leaves
  • 1 tablespoon low sodium soy sauce
  • 2 garlic cloves
  • 1/2 teaspoon black pepper
  • 2-3 cups chicken or vegetable stock (enough to cover the beans with 1″ liquid above)

Directions:

  1. To a sauce pan, add the adzuki beans, bay leaves, mirin, garlic, and black pepper.
  2. Add the stock, making sure the beans are fully covered by the liquid with at least 1” above them.
  3. Cover and bring the broth up to a simmer.
  4. When simmering, turn the heat down to low. Allow to cook until the beans are tender, about 2 hours.
  5. Strain, if extra liquid, and enjoy!

Salt Swaps:

  • Using dried beans versus canned reduces the amount of sodium.
  • Low sodium soy sauce over its full salt version puts you in control.
