I love to make split pea soup, especially after a holiday ham as there’s always leftovers. I keep a bag or two of split peas on hand for when I want a hearty soup on a chilly day, like this one. The recipe below is for an Instant Pot pressure cooker, but you can also cook in a slow cooker, time permitting.
Ingredients:
- 3 Tablespoons unsalted butter
- 2 Celery stalks, diced
- 2 Carrots, peeled and diced
- 1 Onion, diced
- 2-3 Garlic cloves, sliced or chopped (optional)
- 1 Ham bone or ham hocks
- 8 Ounces ham, diced (optional)
- 1 Lb. bag of dry green split peas
- 6 Cups unsalted stock; vegetable or chicken (or water)
- 2 Bay Leaves
Optional Toppings:
- Sour cream or a swirl of cream
- Fresh herbs, like parsley
- Crusty bread
Directions
- Prep your veggies and ham, if using and set aside.
- In a 6-qt Instant Pot, set to saute and add the butter.
- Once melted add the celery, carrots and onion, giving a stir to coat. Grind in some fresh black pepper and stir again.
- After about three minutes, add in the garlic if using, and stir.
- Once the veggies are soft and fragrant, turn off the Instant Pot and add the ham bone, diced ham (if using), split peas, bay leaves and stock. Close the lid and set to high pressure for 15 minutes.
- Once finished, allow to naturally release for 10 minutes before manually releasing remaining pressure.
- Give a stir and remove the bone/hocks. Taste and adjust seasoning, if needed. Then serve topping with a little sour cream, parsley, or just as is. Best served with crusty bread.
Optional Slow Cooker
- Assemble all the ingredients into the slow cooker and set to High for two to four hours. Stir and reduce to low as the soup thickens and cooks. Cook to desired tenderness and flavor.
Salt Swaps:
- Unsalted butter to start, as the ham bone and/or ham will add plenty of salt.
- Choose an unsalted or reduced sodium vegetable stock. You can also use homemade chicken or vegetable stock, which will definitely add flavor and depth.
