Carrots are a healthy vegetable that’s super versatile. This simple, no salt recipe, allows the sweetness of the carrots to shine, balanced by the spice of the cayenne and the earthiness of the cumin.
Ingredients:
- 1 lb. carrots, washed and peeled
- 2-3 tablespoons olive oil
- 1/2 teaspoon garlic power
- 1/2 teaspoon fresh ground black pepper
- Pinch of cayenne (optional)
- Pinch of cumin
Directions:
- Preheat oven to 425F degrees. Prepare a parchment lined baking sheet.
- Cut the tops and bottoms off the carrots and slice into 1/2 inch pieces. I prefer an oblique cut, but circles will do.
- Place in a bowl and toss with the olive oil and spices.
- Once completely coated, spread carrots out evenly onto the prepared baking sheet and place into the heated oven.
- After 15 minutes, give the carrots a shake or move around with a spoon.
- Roast for another 15 minutes or until carrots have carmelized.
Notes:
- Seasoning here is entirely to taste. Add more or less to your liking.
- Finish with a sprinkle of chopped fresh herbs like parsley or dill for an added flavor boost.
