This quick and easy stir fry comes together in minutes and provides a flavorful way to enjoy any veggie. Here made with asparagus, you can swap for green beans, broccoli, and more.
Ingredients:
- 1 Lb. fresh asparagus, woody ends snapped and removed
- Neutral high heat oil like avocado
- 3 Cloves garlic, thinly sliced
- 1 Inch of ginger, grated
- 1/2 Tablespoon sesame oil (optional)
- 1 Tablespoon low sodium soy sauce
- 1-2 ounces water
- Fresh ground black pepper
Directions:
- Cut asparagus into 1 1/2 inch pieces on a diagonal
- Heat a wok or dutch oven over medium high heat. Add oil and heat till lightly smoking.
- Add asparagus to pan and stir regularly. After 1-2 minutes add in garlic and ginger. Cook for another minute or so to remove the raw edge of the garlic and ginger, continuously stirring.
- Add sesame oil, soy sauce and water. Stir and cook until tender, another 1-2 minutes. Finish with a few fresh grinds of black pepper.
- Serve hot with optional chopped scallions or toasted sesame seeds
Salt Swaps:
- Low sodium soy sauce and about half of what most recipes suggest will give you all the flavor without all the salt.
